Orange and Ale Vinaigrette Recipe

Beer Pairing: India Pale Ale (IPA)
Salad Pairing: Garden Salad

 

Ingredients for Orange and IPA Salad Dressing:
  • 3 ounces Indian Pale Ale
  • 1 tablespoon minced shallot
  • 1 teaspoon finely grated orange zest
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 4 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground pepper

 

Wheat Beer Vinaigrette Recipe

Ingredients for Wheat Beer Salad Dressing:
  • 1/4 cup wheat beer
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey

  • 1/2 teaspoon kosher salt

  • 1.5 Tbsp of red wine vinegar
  • 1.5 Tbsp of balsamic vinegar

  • 1-2 Tbsp of honey, to taste
  • 2 shallots, minced or very finely chopped
  • 1 garlic clove, grated or minced
  • salt & pepper to taste
  • cayenne pepper to taste, if you like a little spice

Ingredients for Beer Caesar Salad Dressing:
  • 6 anchovies filets (packed in oil)
  • 1 clove garlic, smashed
  • 2 egg yolks (room temperature)
  • ½ tsp Dijon mustard
  • ¼ cup IPA (room temperature)
  • 2 tbs olive oil
  • salt and pepper to taste
  • 3 tbs parmesan cheese

 

Sweet and Sour Beer Dressing Recipe

Beer Pairing: Sour Beer
Salad Pairing: Arugula Salad

 

Ingredients for Sour Beer Salad Dressing:
  • 2 tbsp. tamarind paste (available at Indian and Asian markets) or 1/4 cup orange juice mixed with 2 Tbsp lime juice
  • 1/2 c. fruit-flavored beer, preferably raspberry or cherry
  • 1 1/2 tbsp. brown sugar
  • 1 tsp. fennel seeds
  • 1/2 tsp. coriander powder
  • 1/4 tsp. cayenne powder
  • 1/2 c. pecans, roughly chopped
  • 4 c. arugula
  • 3 c. baby spinach
  • 1 red bell pepper, chopped
  • 4 hard-boiled eggs, sliced
  • 3 oz. crumbled feta cheese
