The BigFoot is the first beer our Mad Season series. Our line of high gravity beers (high alcohol content).
By far, this is the most labor intensive beer we produce. We borrowed from Winston Churchill's master phrase, "If you're going through hell, keep going.", to help us summarize in a few words how difficult it is to make a product like this. We could not just give up because the idea of creating a product with such a standard quality is simply irresistible to us.
There are so many secrets behind the Bigfoot that make each batch really unique. It begins by the absurd amount of malts from the Pale basic Ale, a combo of caramel malts and three types of roasted malts, which give not only an intense and heavy body to the beer, but are also responsible for providing a great feast for yeast which, in turn, generates a large amount of alcohol in the fermentation process. As every good Russian Imperial Stout should be.
Tasting Notes: Stout black in color, with aromas of spices, wood, alcohol and toast. Coffee and caramel flavor and quite toasty and slightly liqueur with coffee bitterness and hops and woody aftertaste. It has body provided by several types of specialty malts.
Pairs Well With: Sweet chocolates and desserts, or ice cream, as well as red meat or pork with outstanding sauces. Roquefort cheese, fig and cranberry.
