Our friend Jason went for a walk in the woods this past spring and came by the tasting room hoping to pay for his beer with a big old bag of fresh Douglas Fir tips. We’re not into rushing things here so we carefully freezer-aged the fir tips until we felt that they were frozen to perfection. We brewed up a nice old school bitter with UK malt and East Kent Goldings and we heaved in a ‘schwack of Jason’s fir tips. The resulting beer is infused with gentle, wholesome, foresty goodness.
