Dageraad Brewing dry-hopped Categorical Imperative during fermentation and added a biotransformative enzyme to synthesize a new kind of Belgian IPA.
The enzyme sublimates normal hop compounds into new, juicy esters in addition to the esters of our Belgian yeast. Instead of obeying the imperative of the IPA category, we have transcended it.
