Craft brewery in downtown Halifax
Brewed with Pilsner malt, wheat malt, and a touch of Vienna malt, and hopped with Sterling and Hallertau Blanc. This beer was fermented with our house saison yeast, as well as a favourite brettanomyces strain of ours. Conditioned for 3 months to allow the earthy brett funk to express itself, and finally conditioned on a small amount of grapefruit peels. Finally, the beer was naturally carbonated in can using champagne yeast, giving a nice tight carbonation.
