For those who do not know the history, the Holy Cow is our "hops laboratory": a collaborative beer made with our friends Brewery Green Flash Brewing Co., San Diego, CA. The Holy Cow has the same base of Green Cow, but for each new edition, we set up a new recipe with hops and processes.
In this second edition, we use a mix of three varieties of hops during the manufacturing process: Columbus, which contributes to an intense citrus; Chinook, one of the most peppery hops of the universe; and the Australian Galaxy, contributing a touch of tropical fruit. In dry hopping again comes the Galaxy to bring out the intensity of tropical fruits, but this time accompanied by citrus and aromatic Cascade and Citra and an extra charge of Amarillo hops to close with key.
Tasting Notes: Golden colour, intense flavor of hops and citrus fruity reminding tropical fruits such as passion fruit and pineapple. Dry finish and high drinkability.
Pairs Well With: Gorgonzola cheese, Grana Padano and Pecorino, and red meat.
