About La Fosse by Side Project Brewing

La Fosse is a Missouri Wild Ale that was fermented and aged in Missouri Oak Chardonnay barrels for 18 months before being racked on to Oregon Apricots and being aged an additional 6 months before being naturally conditioned in the bottle for several months. 


A 100% barrel-aged, mostly barrel-fermented project. Passion & experimentation drive the creation of rustic Saisons, Wild Ales & spirit barrel-aged ales.
