In order to eliminate quality problems caused by heat, the Bavarian government decreed in 1539 that beer could only be brewed between the days of Saint-Michel and St-Georges (29 Sept - 23 April). Thus the Märzen, or March beer, was the last beer to be brewed in spring. It was kept in underground cellars cooled with ice to satisfy the thirst of the inhabitants of Bavaria during the summer. The remaining beer was drink during the Oktoberfest while waiting for the first brews of fall.
