Nørwood was fermented warm with traditional Norwegian farmhouse yeast, Kveik, in an open-top foeder. It was then transferred into Okanagan red wine barrels for a 3-month secondary fermentation with Brett C, before being transferred into stainless steel tanks and dry-hopped with Enigma just before packaging. The bottles were then conditioned for a few months longer.
They say this ale sings brightly with notes of citrus, pineapple, and a hint of Brett funk, while balanced by a pleasing mineral dryness.
