La Pic-Barrique is a Belgian-inspired Lambic-type beer. This beer was brewed using the traditional mashing method for Belgian lambics called turbid mash. After fermentation, this beer was transferred into oak barrels of Chianti wine to which lactic acid bacteria (Lactobacillus and streptococcus) and wild yeasts (brettaromyces) were added. After aging in barrels, these microorganisms gave this beer a fruity acidity, a taste of rhubarb as well as aromas of earth, baking, hay and stable. In short, a wild, rustic and funky beer designed for connoisseurs!
