Seto Õlu

The Setos, are an endangered people, located right on the border of Russia and Estonia. They speak their own language, have their own customs...and make their own beer! Heavily influenced by their love for kvass, a soft drink made from darkened bread, the malted rye used in the brewing process make the Seto beer extremely rich in aromas. Since this particular bread is only available in Setomaa, Oshlag called on Mathieu Lhomelet, head baker at La Bête à Pain, to recreate this traditional recipe.
