Polly's has gone full craft beer circle in the brewery – hazy to sour, sour to imperial stout, imperial stout to lager. When they were planning The Sun’s Come Up, they tossed and turned between sticking to the Vienna style they’d tread the path of previously, or going completely out of their comfort zone for a clear-as-a-bell Pilsner. After a particularly intense game of rock, paper, scissors, the latter took the space in the brew plans. Brewed as a passion project by senior brewer Matt to embrace his love of the classics, this beer spent six weeks cold conditioning in tank, with light additions of Mittlefruh and Cascade for a bready, crisp, refreshing, and drinkable lager. A shameless homage to the great brewers of Europe.
