Welcome to the first-ever Michelin-starred brewpub! This is our band of artists, rooted in the namesake gypsy spirit of collective ingenuity and dedicated to an elevated level of cuisine, libations and service. We strive to offer a pairings-based experience, beginning with our rotating collection of culinary-inspired session ales brewed in-house. Our seasonally influenced menu is driven by the philosophy that one can create a unique beer that is appropriate, if not essential, to a finer dining experience. Here, we aim to be the center of a community's pulse, a gathering space and the linchpin of boundless creative evolution.
