About

Cellar West Artisan Ales is an award winning brewery founded by traveled craft brewer, Zach Nichols. We brew distinctive beers that celebrate people, place, and purpose.

Many of of our beers are fermented in oak with our house blend of wild yeast. This special union of microorganisms predominantly features Brettanomyces, a wild yeast feared by most commercial brewers due to its aggressive nature and potentially overpowering characteristics. We've embraced these flavor attributes, which can range from wet earth to lush fruit, as well as Brettanomyces' extensive maturation process and mild acidity it can add to beer. These characteristics, paired with patience and a bevy of new world hop varieties, fruits, and spices, produce soft, complex beers with layers of flavor.

Cellar West's barrel house & tasting room is based the Dakota Ridge area of Boulder, Colorado.

We open the tasting room doors to the public on Tuesdays, Wednesdays, Thursdays, & Fridays from 4pm to 9pm, and Saturdays & Sundays from 1pm to 9pm. We pour samples of our beers, offer 500 ml. bottles for on or off-premise enjoyment, and have a selection of bar snacks and Cellar West Artisan Ales merchandise for sale.
